Description:

The lot was manually harvested over cloth in order to avoid any contact with the ground and righ after taht, it was moved to the patio in the same day. The cherries were spread out in even layers, bean by bean for 3 days. Everyday, the cherries were piled up in the afternoon to preserve the heat and covered during the night. Afterwards, the layers were thickened for the following 8 days, revolving 4 times a day, until the moisture content of 11.4% was obtained. Total drying process lasted for 29 days.

Producer Story:

José Carlos Cepera already had a strong entrepreneurial background in the state of São Paulo when he was presented with the opportunity to invest in the agricultural sector in the town of Oliveira in Campo das Vertentes in the early 1980s.

Aiming for diversification, Cepera and the Agricultural Director of the farm, Gilmar, initially turned their attention to swine and grains, but soon realized conditions were very favorable for coffee as well. Fazenda São Paulo attributes great importance to the sustainability of farming and the improvement of process and people through continuous training.
